No-Bake Chocolate Oat Bars

Ingredients

  • 1 cup (2 sticks) unsalted butter

  • 1/2 cup packed brown sugar

  • 1 teaspoon vanilla extract

  • 3 cups quick-cooking oats

  • 1 cup semisweet chocolate chips

  • 1/2 cup creamy peanut butter

Method

  1. Prepare the pan: Line an 8x8-inch baking pan with parchment paper, leaving some overhang on the sides for easy removal.

  2. Melt butter and sugar: In a large saucepan, melt the butter over medium heat. Stir in the brown sugar and vanilla extract until the sugar is dissolved and the mixture is well combined.

  3. Add oats: Reduce the heat to low and stir in the quick-cooking oats. Cook for about 2-3 minutes, stirring occasionally, until the oats are well-coated and slightly toasted.

  4. Press Into pan: Press about two-thirds of the oat mixture firmly into the bottom of the prepared pan. Use the back of a spatula to create an even layer.

  5. Melt chocolate and peanut butter: In a microwave-safe bowl or using a double boiler, melt the chocolate chips and peanut butter together, stirring until smooth.

  6. Layer chocolate: Pour the chocolate-peanut butter mixture over the pressed oat layer in the pan. Use a spatula to spread it evenly.

  7. Top with oats: Sprinkle the remaining oat mixture evenly over the chocolate layer, gently pressing it down.

  8. Chill: Place the pan in the refrigerator for at least 2-3 hours, or until the bars are firm and set.

  9. Cut and serve: Once the bars are chilled and set, use the parchment paper overhang to lift the bars out of the pan. Place them on a cutting board and cut into squares or bars.

  10. Enjoy: Serve the no-bake chocolate oat bars as a delightful and easy dessert. Store any leftovers in an airtight container in the refrigerator.

Remember, you can always adjust the recipe by adding nuts, dried fruits, or other toppings you enjoy.
