FUNKY MONKEY: THE HEALTHY SNACK YOU WON’T BE ABLE TO RESIST

Gluten-free, grain-free, sugar-free, and entirely plant-based, this addictive and healthy snack has taken health-conscious foodies by storm. Now, it’s making its way into kitchens everywhere as part of Bridget Foliaki-Davis’ new cookbook, Bridget’s Healthy Delicious, out this month. This book is set to redefine healthy eating—one irresistible bite at a time. But be warned—one taste, and you’ll be hooked!


The Funky Monkey


Serves: 8


Ingredients


125 g (4 oz) unsweetened coconut yoghurt

1 ½ tbsp almond butter or another nut or seed butter of your choosing 

2 tbsp chopped nuts

½ medium firm avocado, diced

150 g (5.2 oz) Smooth as Dark Chocolate pieces, gluten, sugar, dairy-free

20 g (⅔ oz) extra virgin coconut oil

Mineral  or Himalayan salt


Method


  1. Stir the coconut yoghurt, Zero as Sugar Pure Erythritol, almond butter and nuts together, then carefully fold in the avocado. 


  1. Line a small tray with non-stick baking paper. Using a teaspoon, place eight even-sized blobs of mixture on the tray. Add a drizzle of Sweet as Fibre Syrup to each blob, then freeze for two hours or until firm. 


  1. Place the Smooth as Dark Chocolate and coconut oil in a heat-proof bowl. Place the bowl over a small pot of simmering water, ensuring the base of the bowl does not touch the water. Melt the chocolate, stirring until smooth. 


  1. Remove the yoghurt from the freezer and, using a small knife, dislodge the pieces from the tray. 


  1. Using two spoons, dip a yoghurt piece into the melted chocolate, ensuring it is fully covered, and place it back on the tray. Repeat until all the yoghurt pieces have been covered in chocolate. 


  1. Sprinkle the tops with a bit of mineral salt, then pop the tray back into the freezer for a couple of minutes to harden. 


  1. Store the hardened, funky monkeys in a freezer for up to three months.
