BAKED SALMO WITH ROASTED VEGETABLES

Looking for a healthy and delicious dinner option that is quick and easy to prepare? Try this baked salmon with vegetables - it's packed with omega-3 fatty acids from the salmon, as well as fibre, vitamins, and minerals from the sweet potato and broccoli. Enjoy!


Prep time: 10-15 minutes

Serves: Four


Ingredients:

  • 4 salmon fillets1 large sweet potato, peeled and cubed

  • 2 cups of broccoli florets

  • 2 tablespoons of olive oil

  • Salt and pepper to taste

  • 1 lemon, sliced

Method:

  1. Preheat the oven to 400°F (200°C).

  2. Place the salmon fillets on a baking sheet lined with parchment paper.

  3. Season the salmon with salt and pepper, and top with lemon slices.

  4. In a separate bowl, toss the sweet potato and broccoli with olive oil, salt, and pepper.

  5. Spread the vegetables evenly around the salmon fillets on the baking sheet.

  6. Bake for 15-20 minutes, until the salmon is cooked through and the vegetables are tender.
